NUSBAUMER POIRE WILLIAMS
This fragile fruit, from the Rhoone and Durance valleys, with yellow-green skin and white, fine and melting flesh, is very juicy and fragrant, with a tangy taste. The choice of raw material is essential: the fruits must be healthy, not damaged.
This pome fruit is produced like a stone fruit. After a natural fermentation determined precisely each year, the fruits are distilled in an artisanal and traditional way in one of our four small copper stills. This eau-de-vie is then aged for a few years in stainless steel barrels to obtain this unique roundness and finesse. At the end of this long aging, we reduce it to 43% with water from our own Vosges spring. This water which passes through a purple schist subsoil is of great purity and gives it a singular strength.
