Dailuaine 16yo Flora & Fauna is a single malt produced the powerhouse that is Diageo. As well as producing many of the Globally distributed single malt and blended whiskeys you know and love, they also own many smaller distilleries with little to no single malt bottlings, where all the whiskey produced went into blends (Such as Johnny Walker and Bells). This changed in 1991 when a small range of single malt bottlings from the lesser known distilleries in their portfolio started to get released.

Coming from the heart of the Speyside region, Dailuaine is one of the releases from the flora and fauna range you will have real trouble finding other examples of. So, you would be forgiven for not having heard of it.

It was the first distillery to have the pagoda style roof on top of the kiln (a characteristic you are now likely to see crowning many of the distilleries in Scotland). It has also burnt down and been rebuilt twice in its lifetime. It’s a good thing they stuck with it though, as this whiskey is delicious.

NOSE
A deep nose. The immediate impression is of Cheddar cheese rind, backed by old Madeira. The after-dinner mode continues with walnuts and light butterscotch, but after a while, the whisky settles and becomes more orangey - old oranges, with hard peel and over-ripe inside. With water, the cheese rind becomes cheesecloth then damp muslin; the old orange becomes fresher, with some lemony notes - like a mixture of orange and lemon juice, then settles as candied peel. The nose is an interesting combination of freshness and maturity. Some sandalwood after a while, and light toffee, which increases over time.

PALATE
Straight, the whisky is full, sweet and warming. Reduced, the profile is similar. It retains its citric freshness, but with deeper currents, and a trace of Highland toffee.


FINISH
Warming, with a light nutty aftertaste.
