CHAMPAGNE LALLIER GRAND CRU VINTAGE
A Lallier Vintage (Millesimé) is not declared every year and this is a Champagne of exhilarating freshness made slightly from more Pinot Noir than Chardonnay. Straw yellow with fine delightful bubbles. On the nose the toasty brioche notes are very traditional, in contrast to the slightly savoury and nutty, baked apple flavours which follow through to a crisp, complex and flavoursome finish.
Sourced exclusively from vineyards officially classified Grand Cru – Chardonnay from the Côtes des Blancs and Pinot Noir from Aÿ. The provenance of the grapes enables a low dosage to express the purity and the richness of these terroirs. Using almost half in half Pinot Noir and Chardonnay grapes alcoholic fermentation is with Lallier’s ‘in-house’ yeasts (cultivated from the Loridon vineyard) and the wine undergoes partial malo-lactic fermentation. With a 7g/L dosage, the bottles are matured on their lees and aged for more than 5 years in Lallier's old underground cellars. Disgorged in September 2016.
Pair with fish and scallops 'a la plancha', or chicken with a creamy or slightly spicy sauce.
